Split by design: a whiteboard conversation with no AI, then an implementation round with any AI. The first part is a human conversation about ambiguous requirements and a high-level approach. The second is implementation on the candidate's own machine over screen share, with any tools or none. They score whether you can walk through and defend the code, not how it was typed. They used to ban AI and try to catch it, and stopped.
